I used to go to Japan on business, before I became a chef. After a day of meetings, I liked to escape my hotel and find somewhere to unwind amid the busy atmosphere of locals socialising over food and drinks.
I liked being able to order dishes without the constraint of 'starter, main, dessert'. Even here in the UK, I often order two starters instead of a main, to try more things. It works even better as a group, if you are happy to share!
